Located among the white-tinged salt flats of Las Salinas, a UNESCO World Heritage Site on Ibiza’s spectacular southern coast where flamingos spend their summers, MAINE Ibiza is taking advantage of the lush natural landscape of this corner of the island by ushering in a new gastronomic concept within an abundance of alfresco space. Housed within a restored 18th century finca, the hot new Ibiza fine dining destination is surrounded by gardens, a shaded outdoor terrace and a mezzanine-style rooftop that provides uninterrupted views of the stunning scenery. Eagle-eyed gourmands will recognise MAINE Ibiza as the latest extension of its much-lauded counterparts in London’s Mayfair and Dubai, but this is the first Balearic outpost for the brand. Offering the same considered food philosophy that made the brand an international success, but with the kind of laid-back vibe that you’d expect from a sea-facing restaurant, this is low-key Ibiza fine dining, where the finest ingredients are sourced from around the globe, and local farmers and fishermen contribute with the very best Mediterranean produce.

The result is a range of enticing menus built on exemplary, carefully sourced ingredients, transformed by the love, care and attention of MAINE Ibiza’s talented team. At the Raw Bar, freshly shucked oysters of various varieties are served with fermented jalapeño mignonette; delicate sea bass ceviche comes with blood orange, agave, chilli, scallions, togarashi and dill; and exquisitely prepared steak tartare is served with potato bark and pecorino. Meanwhile, the main menu features mouth-watering starters like Jamon Iberico paired with grilled malt sourdough; crispy fish tacos with pico de gallo, white cabbage and hot sauce; and a tasty tomato carpaccio served with sumac, herbs, lemon juice, salt and olive oil.

Don’t miss signature fine dining dishes like the angry lobster pasta, homemade with linguini, bottarga and spicy bisque, or the roasted eggplant with tzatziki, garlic chips and radish cress. Fans of fish will relish the chargrilled wild turbot at MAINE Ibiza, aged for seven days and then energised with warm pil pil sauce, while meat lovers will savour every mouthful of the Wagyu sirloin steak, sourced from the wild, rollings hills of the Chilean countryside, where cattle roam free and graze on organic grains.

Ice-cool concoctions at sundown are also of prime importance at the stylish Ibiza fine dining eatery, where a range of curated drinks options are on offer. Sip on sommelier-selected wines from the old world, new world and biodynamic menus; indulge in a glass of premium quality tequila or mezcal; and don’t leave MAINE Ibiza without trying a signature cocktail, with options including hibiscus margarita made with hibiscus-infused silver tequila, Cointreau and syrupy agave; and a frisco Collins with eucalyptus-infused gin, matcha, honey and ginger ale.
