As the sun dips each night, the terrace at this Ibiza restaurant glows in the last rays of daylight, reflections sparkle across the bay and the first stars appear in the inky sky above. Evening fades into night, and the pace picks up with DJs. Romance morphs into dancing, and the night is full of promise.

The ROTO Ibiza menu delivers what the mood demands featuring strong flavours, inventive combinations and classic dishes – but first, cocktails. The extensive list at this late-night Ibiza restaurant is brimming with original concoctions and all the classics. The Fresa Salvaje is a tangy blend of mezcal, lime, strawberries and Tabasco while the Sugar Daddy ups the ante with Dewar’s 8, triple sec, lime, bitters and ginger beer. Liquidly sated, it’s time to peruse the menu.

To get the most out of your visit to ROTO Ibiza, it’s advisable to order a round of starters to share. Caspian Osciertra imperial caviar comes on mini blinis with cream cheese, while grilled caramelised artichokes with Romesco sauce hint at Spanish tradition. López Russian salad is topped with shrimp; Mediterranean red tuna tartare is refreshing; and the tiger prawn tempura is served with a punchy Korean chilli salsa. An assortment of sushi, sashimi and hand rolls from the Ibiza restaurant’s raw bar is always a welcome addition to any table.
