The modern Mediterranean and Spanish influenced kitchen headed up by chef Jordi Tomás Ribas sources high quality, fresh produce – local and organic wherever possible, much of it from the Ibiza beach restaurant‘s onsite veggie garden – on a daily basis. Start with dishes such as the elegantly plated courgette and green bean salad with sundried cherry tomatoes, pine nuts and vegan feta; the much-loved grilled red king prawns; or Amante Ibiza’s signature croquetas, stuffed with monkfish and prawn, drizzled in a parsley sauce.
For mains at Amante Ibiza, think haute cuisine style Mediterranean dishes, from decadent chargrilled octopus, rose-shaped homemade pasts filled with prawns over beurre blanc, topped with Oscietra caviar; the veggie-friendly roasted pumpkin with burrata, herbs, and raspberry and pomegranate vinaigrette. There’s also a succulent Galician veal chop with chimichurri; a delectable Cantabrian cod fillet in piparra pepper cream or the oven-baked mushroom risotto with black truffle oil and a Parmesan crust.
