As evening falls, the space becomes more intimate, where quiet conversation is complemented by exceptional wines and delicious sharing plates. The culinary offering at Echezo Ibiza reflects the same care as the cellar. Renowned provedores Maison Dehesa provide the Ibiza restaurant with delicacies such as a smoky chorizo, thinly sliced and served with bread while local farmers, Juntos Farm, deliver seasonal organic produce. Standout dishes include umami-rich bottarga with creamy Ibiza-made stracciatella, line-caught sardines XXL on grilled sourdough and a zesty gazpacho, each bringing a freshness and clarity ideal for wine pairings. Smoked eel sashimi, homemade croquetas and fresh Juntos Farm goat cheese drizzled with Ibizan honey expand the selection, while heartier plates include a juicy flame-grilled Argentine sirloin and a tender Iberian pork loin. The new Ibiza fine wine bar and boutique was conceived by Philippe Kalmbach, a former tech entrepreneur who channelled his love of fine wines into Wine Source, a global network for rare drops and elusive labels. Moving on from that venture, Kalmbach now pours his knowledge into Echezo Ibiza. At his side is Xavier Rousset, who became the youngest ever master sommelier at just 23 before shaping wine programs for Michelin-Starred restaurants, judging on international panels and opening celebrated London hotspots such as Texture, Blandford Comptoir and Black Book. Together, they have created an Ibiza restaurant where world-class expertise meets a laid-back Ibiza style.
Indulgence is an artform at Echezo Ibiza where peak culinary heights come in the form of an incomparable caviar menu. Baeri, Oscietra, Beluga and the remarkable Albinos golden eggs are served on buttered toast or as part of a four-caviar, four-Champagne tasting that explores caviar and effervescence in sublime detail. Each pairing at this Ibiza restaurant has been chosen to highlight nuance with options such as Savart Ouverture, Bérêche Brut, Larmandier Bernier Longitude and Marie Courtin’s 2017 vintage.
The stand-alone wine list is designed for discovery – think verticals of Côte d’Or whites, the precision of récoltant-manipulant Champagnes, and rare vintages poured alongside limited-releases from rising stars. Guests can taste by the glass or order full bottles, exploring wines from elite makers such as Antoine Jobard, Pernot Belicard and Duroché and Champagnes from Savart, Bérêche, Pouillon, Dhont Grellet, La Rogerie and Jérôme Prévost.
