Every meal is a special occasion at Amalur throughout the holidays, and the celebrations continue on New Year’s Eve with a decadent à la carte dinner. Start with plates piled high with the island’s finest seafood, such as prawns, langoustines, oysters and more – best washed down with plenty of bubbles – along with red shrimp carpaccio and trout roe; asparagus with poached egg, Parmesan fondue and white truffle; or the decadent beef tenderloin carpaccio with foie gras.
The first course includes tortelli with Parmesan and white truffle; smoked homemade tagliolini with langoustines; or risotto carnaroli with lobster. For mains, choose between grass-fed tenderloin with foie gras and apples; slow-roasted goat shoulder with black truffle, mugnaia sole with hazelnuts, lemon and caviar; or salt-baked wild sea bass with seasonal vegetables. Enjoy desserts like panettone with Chantilly cream; berries with ice cream; or zabaione with truffle and cantucci almond biscuits by the Amalur fire, to the sounds of champagne glasses clinking as the clock strikes 12.
