Since its opening in 2018, the stunning five-star 7Pines Resort Ibiza, part of Destination by Hyatt, continues to dazzle on the island’s west coast. The recent appointment of Óscar Salazar as Executive Chef highlights the hotel’s dedication to blending local ingredients with Mediterranean flair and sophisticated culinary techniques. Salazar, acclaimed for his stints at several prestigious hotels, now commands the kitchen at The View, a restaurant distinguished by its Repsol Sol and MICHELIN mentions. Under his guidance, the resort’s culinary offerings – extending to Pershing Yacht Terrace, Cone Club, and even room service – promise to deliver a literal feast for the senses.

There’s a lot going on at 7Pines Resort Ibiza this season – for both hotel guests and visitors – so get your calendars out to take note. Pershing Yacht Terrace, the Ibiza bar and restaurant with a view to Es Vedrá like no other, is celebrating its official Grand Reopening this weekend with the first two-day event in a series of special collaborations with Alvarez Brands titled Sip & Explore. With a sleek and sophisticated look inspired by and designed in collaboration with the revered yacht company of the same name, the luxurious venue is the west coast’s premier destination for wining and dining.

The inaugural Sip & Explore soirée kicks off from 7pm this Saturday June 01, 2024, when guest mixologists from the illustrious Dr. Stravinsky cocktail bar in Barcelona – acclaimed as one of the world’s top 50 bars – get stirring and shaking through a pop-up cocktail menu showcasing four of their most iconic creations plus an Ibiza-inspired libation created in partnership with Campos de Ibiza. Salazar matches the flavours of these handcrafted thirst-quenchers with an artfully curated à la carte menu of Japanese-inspired dishes for the occasion, served beneath the Balearic sky and stars.

The celebration doesn’t stop there. On Sunday June 02, 2024, Pershing Yacht Terrace and Dr Stravinsky co-host a master workshop from 5pm to 7pm where guests can delve into advanced mixology and the creative science lab-style philosophy of the Barcelona-based mixologists. Tickets are 70€ per person, and you’ll make (and most likely drink) three or four cocktails before resuming the festivities until midnight. Sip & Explore continues throughout the summer with legendary Spanish mixologists bringing their distinctive flair to Ibiza. On June 18 and 19, 2024, the bar is handed over to the former winner of Spain’s Bacardi Legacy, Eme Otero of Grupo Carbón, along with Alberto San Miguel of Seville’s Río Grande, before the series concludes on September 03 and 04, 2024 with Madrid’s 1862 Dry Bar – considered one of the best in the world.

For those needing to satiate a different craving, The View boasts a refined à la carte menu that’s as delicious as the view is stunning. Sometimes it’s too hard to choose, a problem thankfully solved with one of Salazar’s incredible tasting menus. There’s a four-dish and six-dish option plus a full vegetarian menu too. Each of these gastronomic experiences is inspired by the Mediterranean and includes morsels such as lightly grilled mackerel with a soup of sherry cherry, pistachio and grape; suckling pig ribs with carrot, quinoa, endive, celery and orange and a traditional sofrit pagés reimagined with chard, parsnip and sobrasada. Wash it all down with some of the most exquisite wines from Spain and beyond.

Of all the exciting things happening at 7Pines Resort Ibiza this summer, Salazar’s Four Hands dinners are true standouts. The first visiting chef is Javier Guillen, bringing his experiences from the famous El Bulli as well as skills garnered from his time with Valrhona, Pierre Hermé and Oriol Balaguer. A master of chocolate, pastries, cakes, ice cream and everything in between, this award-winning chef has devised a delicious and ingenious dessert breakfast experience from June 23 to 28, 2024 in addition to a more traditional Four Hands dinner at The View. The sweet-toothed should not miss Guillen’s workshop, where he is sure to impart some of the most coveted secrets of sweetness.

Miguel Carretero from MICHELIN-starred Santerra in Madrid is the next guest chef to join Salazar for a Four Hands dinner. Known for his focus on seasonal, locally sourced ingredients, he and Salazar have created a phenomenal dinner designed to fully embrace the flavours of Ibiza. Come Thursday July 11, 2024, these two culinary cohorts front up The View with their once-in-a-lifetime menu – and if you like what you taste (and we’re sure that you will!), be sure to book in the following day for an exclusive workshop to learn the tricks of the trade for recreating these dishes at home.

Salazar’s vision encompasses new additions at Cone Club too, where the menu continues to showcase tapas and sharing plates designed to be enjoyed with a chilled drink and the expansive view across the sparkling sea. Delicacies include marinated tuna with local thyme blossom honey and herbs from the chef’s garden, Yahuna-style red prawn rice, and grilled leeks with anchovy cream. The venue’s beloved Sunset Rituals are back this year where a glass (or two) of cava sangria is soundtracked with an epic selection of tunes from local DJs, all accompanied by the stunning colours of sundown.
