Eternal flame – Nela Pop-Up with Óscar Salazar
Live-fire fine dining meets spectacular vistas at Ibiza’s most exciting new culinary collaboration at 7Pines Resort Ibiza.
The panoramic views from the luxurious dining terrace at 7Pines Resort Ibiza are nothing short of magnificent. Set above the turquoise coves of the island’s untamed west coast, the Mediterranean Sea shimmers and sparkles as the sun begins to set, and the majestic rock formation of Es Vedrá appears to hover on the horizon in the distance. This summer, these vistas form the backdrop to one of the most exciting, high-end gastronomic collaborations in Ibiza: Nela Pop- Up with Óscar Salazar, opening its doors on Thursday May 22, 2025 and open to hotel guests and visitors alike.
The internationally acclaimed Amsterdam restaurant will be taking up residence at 7Pines Resort Ibiza for the entire duration of the summer season, but this isn’t just a case of a restaurant taking over the space. The Nela Pop-Up is a true meeting of the culinary minds, as Nela founders (and celebrated chefs themselves) Hari Shetty and Ori Geller invite 7Pines Resort Ibiza’s executive chef Óscar Salazar to put his own distinctly Balearic spin on their foundation of live-fire cooking, exceptional ingredients and daring flavours – an audacious and ambitious take on fine dining that’s got the island’s foodie community abuzz.

With its flagship restaurant in Amsterdam and another set to open in London later this year, Nela is named for the Sanskrit word for pure. Its culinary philosophy is a true reflection of this, based on the open flame and born from the desire to return to the most primitive and essential elements of cooking: fire, hot coals and smoke. From sourcing the highest quality, hand-picked ingredients to mastering innovative cooking techniques to create bold yet refined flavours, there is nothing purer than cooking over fire – a method as ancient as it is powerful – and at the Nela Pop-Up at 7Pines Resort Ibiza, diners will experience this firsthand.
Both Shetty and Geller bring years of global experience to the kitchen. Shetty’s Indian roots, along with his experience in some of the most prestigious kitchens in London and Amsterdam (including Nobu, Momo and Izakaya) are the perfect match for Geller’s flair for high-end Mediterranean cuisine, honed in Tel Aviv, New York and Amsterdam, where he helped shape Mr Porter and MICHELIN-starred restaurant, The Duchess, where he subsequently met Shetty. The duo left their respective posts in the autumn of 2021 to focus on their shared passion for precision, purity and produce, and Nela was born.

The chefs also share a passion for the idyllic shores of Ibiza, a love that led them to discover the less-explored west side of the island, where 7Pines Resort Ibiza, part of Destination by Hyatt, has been proudly elevating the area’s dining scene since its inauguration in 2018. The resort’s sleek, upper-level restaurant (a space that was formerly home to The View) is the perfect location for a Nela Pop-Up on the white isle, stretching out across an expansive terrace with those iconic sea, sunset and Es Vedrá views, and an open kitchen design that lends itself to the brand’s signature, grill-led approach.
For Salazar, whose impressive resume includes five-star kitchens such as the MICHELIN-star and Repsol Sol-awarded La Gaia and Hacienda Son Antem in Mallorca, the opportunity to team up with Shetty and Geller adds a new string to his already accomplished culinary bow. Together, the three chefs have created a menu that shines a light on exceptional local produce while fusing a global outlook and authentic Ibiza soul with the magic of flame-cooking. From ingredients and technique to plating and wine pairing, every element of the dining experience at Nela Pop-Up at 7Pines Resort Ibiza has been perfected.
As the sun begins to set and the sky shifts from gold to inky starlit blue, flickering candlelight and sunset hues set the perfect scene for a night of culinary excellence at Nela Pop-Up. The mouthwatering aromas coming from the open flames and grill in the kitchen waft throughout the restaurant space, building the anticipation of the flame-kissed feast that’s to come. The menu has been designed to take you on a slow journey through dishes infused with an elemental depth, starting with aperitivos of crunchy tubers with green mojo and piri-piri, the intriguing chicken coconut Thai doughnut or luxurious focaccia with caviar while you sip on cocktails and admire the view.
Whether it’s a citrusy aperitivo or a smoky mezcal concoction, all cocktails at Nela Pop-Up have been crafted to complement the fire-driven menu. Follow up with a bottle from the expertly curated wine list, choosing from crisp Ibizan whites, mineral-rich rosés and structured reds from across Europe and beyond – perfect for pairing with the intensity of the grill. Take your time perusing the menu; creations like these deserve careful consideration. From the raw and cured selection and vegetables and salad through to the impressive fish, seafood and meat options, Salazar, Shetty and Geller draw on the potency of fire, charcoal and smoke to transform quality produce into exceptional plates.

Wherever possible, ingredients are sourced locally, from island vegetables and wild herbs to sustainably caught seafood. The Nela Pop-Up kitchen’s respect for the land and sea is matched by a no-waste approach that puts flavour and integrity first. Start with a single oyster, served with fermented chilli and smoked oil; carabinero tartare with bone marrow; silky yellowtail with lemon truffle or a zingy scallop with pumpkin, grapefruit and blood orange.Vegetarians will delight in the plentiful options at Nela Pop-Up, including roasted carrots scattered with pollen, pickles and a dollop of labneh; the indulgently creamy truffle potato omelette; and mouth-watering corn tempura. Order a summer salad of Ibiza tomatoes, stracciatella and harissa dressing to share, and be sure to sample the must-try avocado with sour cream and beluga caviar (also available with potato).
The smoky aroma from the open flames permeates most of the main courses at Nela Pop-Up, with the fresh grilled langoustine, king crab and fennel corn cream a true standout, as is the half lobster with guajillo butter and mandarin. Naturally, flame-grilled rib-eye and Japanese Wagyu with shimeji are menu highlights, while the slow-cooked short rib is nothing short of melt-in-the-mouth magic. Just be sure to save room for dessert, where classics are reimagined – think cheesecake with fig; millefeuille with açaí and miso, or the aptly named Sweet Dreams.
After dinner, order a digestif, sated and satisfied, sit back to marvel at the starlit sky and the moon casting a silver trail across the gentle waves below and plan your next visit to Nela Pop-Up. This new chapter of fine dining at 7Pines Resort Ibiza is set to become the most in-demand gastronomic experience on the island this summer – discerning diners should add a reservation to their holiday wish lists now.
