Dine & Dance into 2026 at ROTO
If you’re looking to close the final chapter of 2025 with a firework-like bang, there’s nowhere better in Ibiza than ROTO. Perched over the water’s edge in Marina Botafoch, the restaurant offers diners and partygoers front-row seats – literally – to the island’s impressive NYE fireworks display and an underground bunker to dance away the very first few hours of 2026.
It all starts with a very special dinner to ease you into the party mood, with the menu created for this one-night-only occasion. Arrive at 8.30pm to be greeted with a welcome cocktail, before being led to your seat for the meal to begin at 9pm. Start with aperitivos of Gillardeau oysters No3, doused in mezcal margarita and worm salt; a bluefin tuna katsu sando with miso and foie mi-cuit; and a pani puri of steak tartare with cured egg yolk and freshly shaved truffle. Your luxurious starter is a local lobster, served with caviar hollandaise and tobiko, followed by a choice of grilled wild sea bass or tender Wagyu short ribs. A classic Sacher with Guanaja chocolate cream is the literal icing on the cake, and just before the clock strikes 12, you’ll be served party favours alongside 12 lucky grapes – as is tradition – to gulp down with each chime of the bells. As the fireworks begin, so too does the party – and where the night ends is anyone’s guess!
