In 2025, Ibiza’s foodie scene is more abundant than ever. In some parts of the island, it’s hard to walk more than a block without stumbling over a restaurant. No matter how spoilt for gastronomic choice islanders have become however, there are still times when nothing beats a good old-fashioned burger. Enter Gasoline Grill, the cult Copenhagen culinary brand taking up residence at The Standard, Ibiza this summer. Serving up their world-famous burgers daily from the snazzy kitchen in the hotel’s ground-floor restaurant, Jara, from noon until sold out, it’s the pop-up that’s got your comfort food cravings covered.

The original Gasoline Grill opened in Copenhagen in 2016, in a gas station in Landgreven, and very quickly became a runaway success, named one of the world’s best burgers by Bloomberg and also appearing on Netflix’s Somebody Feed Phil. Founder Klaus Wittrup had experienced his first taste of American-style burgers back in 1992, while on an exchange student program in the US, and for years he chased that burger high back home in Denmark with no joy.

The solution was obvious: do it yourself and Klaus set about creating a simple and authentic high-quality burger joint in one of the gastronomic capitals of the world, with a focus on organic, high quality ingredients. Today, the iconic brand has seven brick-and-mortar outlets in Copenhagen, operates a food truck service, is situated in Tivoli and Copenhagen Airports and is also popping up in Ibiza town at The Standard, Ibiza.

Crispy, caramelised smash-style patties, gooey melted cheese, a squishy and buttery bun and (if you please) tangy pickles are Gasoline Grill staples, along with that secret recipe ‘gasoline sauce’ that’s impossible to recreate and as more-ish as they come. This is the first time the legendary Danish burger joint has vacationed in Spain, so to pay homage to its summer HQ, the burger geeks behind the grill have created a bespoke burger with an Ibiza-flavoured twist. The Ibiza Burger is made with 100% organic beef, pickles, sharp Mahón cheese, sweet and crispy sobrasada (a locally made sausage), Oklahoma-style onion (smashed into the beef while sizzling on the grill) and tomato with honey dressing – all the more reason to visit Jara at The Standard, Ibiza this summer.

Whether you’re a first-timer or long-time fan, an island resident looking for a convenient takeout option or holidaymakers looking to quell a craving, the Gasoline Grill menu at The Standard, Ibiza is guaranteed to please. See what started the viral sensation by ordering the Original Burger (with all of the above staple ingredients plus fresh lettuce, tomato and onion) or channel your inner Iron Man and opt for the Cheeseburger (dubbed ‘The Benchmark’), which eschews accoutrements like lettuce and tomato in favour of oozy, indulgent, organic cheddar cheese. Vegetarians will love the option to switch out the beef for plant-based MATR patties – made from organic, juicy and umami-rich fungi-fermented upcycled plants from local farms (try saying that 10 times fast!).

For those swerving red meat – or perhaps it’s your second, third or fourth visit to Gasoline Grill at The Standard, Ibiza – the Hot Chicken Sandwich ticks all the right boxes. Made with organic chicken thigh marinated in Gasoline Grill’s own Spicy Mix, topped with homemade coleslaw, pickles, lettuce and creamy dressing, it’s described as a fusion of Nashville and Korea and is one of the brand’s best-sellers. Add a side of old-school crinkle cut fries to your order (and better yet, douse them in vinegar) and they’ll be delivered to your table in a quirky paper bag, just like the OG versions in Copenhagen. And if one of your friends (gasp!) isn’t a burger fan, never fear – Jara still serves up its extensive à la carte menu from day-to-night, alongside its special guest burger stars.

In true burger joint style, Gasoline Grill burgers are also available to takeaway, so you can order on the fly then grab your joy-filled paper bag and take it to the beach, on a boat, back to your hotel room, to the pool or to your very own living room where you can savour the flavours from the comfort of your sofa. The perfect hangover cure, a pre-clubbing fuel-up, a tasty cheat day dinner or simply just because – there’s no reason not to indulge. Except, of course, if the burgers have sold out for the day. Total dedication to quality and freshness plus a commitment to avoiding waste is at the core of the Gasoline Grill philosophy. The organic meat is ground in-house at Jara each day, and once the day’s supply has run out, that’s it – no more burgers until tomorrow.

As the saying goes, all good things must come to an end, but fortunately for burger lovers in Ibiza, the Gasoline Grill pop-up at The Standard, Ibiza runs until the end of September 2025, so there’s plenty of time to get your fill and go back for more. And finally, if all this talk of plump, juicy burgers is making you question your swimsuit options for your Ibiza holiday – stop right there. The freshness and quality of the ingredients used by Gasoline Grill mean your meal is about as pure and simple (and tasty) as a burger can gets, packed with protein and topped with fresh organic veggies. Plus, part of the beauty of being in Ibiza is that you can dance it off later anyway!
