Sun-kissed days and starry nights – El Silencio & Urusai Ibiza

Sun-kissed days and starry nights – El Silencio & Urusai Ibiza

Words Kristie Rogers

A hidden slice of epicurean paradise on the golden shores of Cala Molí on the island’s southwest coast.

Arriving at the quaint little bay of Cala Molí in the southwest of Ibiza is like finding a pot of gold at the end of the rainbow. As pretty as a 1970s postcard, and quite remarkably, still as unspoiled now as it was then, it feels as if time stands still here. Crystalline waters gently lap the shoreline as bohemian beachgoers dip in and out of the shallow sea between sunbathing and snoozing. Wild Mediterranean flora clings to the rugged, rocky and rust-red cliffs surrounding the beach, while the familiar scent of pine floats down from the hills that have kept the cove secluded all these years. Presiding over it all is El Silencio Ibiza – the quietly luxurious beach restaurant’s name hinting at the hush-hush nature of its location.

While Cala Molí somehow still manages to remain a fiercely guarded insiders’ secret, lovers of food, music, art and authentic cultural experiences are already well acquainted with El Silencio Ibiza, which celebrates its fifth anniversary in summer 2025. Alongside the gorgeous, sandy floored beach restaurant – helmed by three-Michelin-starred chef Mauro Colagreco – sits the brand’s chic sunset-to-moonlight sister project, the izakaya-style fine dining destination, Urusai Ibiza, and its most recent offshoot, Urusai Sunset Bar. An audiophile’s dream, the vinyl-only listening bar is curated by island DJ Jaime Fiorito and taps into the traditional Japanese HiFi bar experience while giving it a uniquely Balearic twist. All the more reason to visit Cala Molí this season…

By day, it’s all about the laid-back but luxurious barefoot beach experience. Spend the day on Cala Molí, then head into the shaded surrounds of El Silencio Ibiza for lunch or make a day of dining on daybeds and loungers in the sand. For those who aren’t partial to sand between their toes (you know who you are!) there’s also the option to reserve oversized beds by the glistening El Silencio Ibiza swimming pool so you can still soak up the sun’s rays in between wining and dining in the restaurant. And if it’s a chic, pre-sunset supper you seek, good news is that the last table reservations at the beach restaurant can be made for 6.30pm – just in time to catch golden hour and witness the sun begin its descent into the sea.

The cuisine at El Silencio Ibiza ranges from light summer bites to flame-kissed meats and epicurean feasts that are fit for a king (or queen!). Colagreco is passionate about creating meals that can be shared among tables of friends and loved ones, becoming cherished memories of your time in Ibiza. Start with piquillo peppers stuffed with brandade, herbs and citrus or plates of silky jamón iberico, before choosing a selection from the raw seafood bar: oysters with cucumber jelly, cider vinegar and shallot cream; classic Peruvian ceviche; or the much-loved ‘toro Ventresca’ – the restaurant’s signature tuna tartare topped with Oscietra caviar, ponzu sauce and chives.

Salads here are a thing of beauty – try heritage tomatoes with peach, verbena, candied lemons, ginger and nuts; refreshing watermelon with cucumber, avocado, feta and coriander; or the giant burrata de Puglia with beans, peas, mint, capers and lemon. Colagreco’s best-known passion, however, is the art of flame-cooking and at El Silencio Ibiza, he works his magic over fire and hot coals daily. Imagine plates piled high with flame-red crayfish, or king crab legs brushed with brown butter. Then there’s the giant octopus tentacle, cooked Galician-style; a fall-off-the-bone lamb shoulder in Basquaise sauce; rich, truffle-skin chicken with thyme; crispy Iberian pork pluma or succulent steaks – choose from tenderloin with Béarnaise, Tomahawk with chimichurri, or Wagyu sirloin with pico de gallo.

Fish too, fresh from the market, gets Colagreco’s grill treatment – think turbot with pil-pil sauce, lemon-infused John Dory ‘a la Ligure’ with capers, olives and basil, or the decadent papardelle with lobster. Vegetarians are spoilt for choice, with highlights including Sicilian aubergine in smoked Scamorza foam; truffle pizza; stuffed bell peppers and more. Whatever you do – save a little room for dessert. El Silencio Ibiza is famous for the chef’s churros, dunked in dulce de leche and chocolate, along with the dulce de leche flan, made from Colagreco’s family recipe. This is quintessential Mediterranean feasting, made with a South American twist and ultra-fresh local produce.

Back on the sand, as the sun begins to fade, there’s a shift in the ambience on Cala Molí. A sense of anticipation fills the air as golden hour settles over the beach, like anything could happen, at any moment. Onshore, focus moves from the beach restaurant to Urusai Sunset Bar – the new, minimalist-meets-organic terrace where sound, sake and sunsets combine to create the perfect moment in time. At the centre of the low-ceilinged room is a spiralling, sculptural column reminiscent of a tree trunk, surrounded by a smattering of low tables that encourage guests to kick back, sip on cocktails like the Lychee Martini or the Wasabi Margarita and immerse themselves the soundscapes drifting through the state-of-the-art sound system.

Inspired by traditional Japanese listening bars (also known as HiFi bars or jazza kissa), it’s strictly a vinyl-only affair at Urusai Sunset Bar. The selection lining the shelves has been personally chosen by Fiorito, with many of the records sourced hailing from the most highly coveted private collections in Ibiza, including those of his late father, Alfredo – known as the father of the Balearic Beat movement – and the dearly departed godfather of chillout, José Padilla. Fiorito also had the privilege to pluck plates from Concept Hotel Group founder and CEO Diego Calvo’s music collection, plus many records belonging to legendary DJ Piti and his brother, Pacha Ibiza founder Ricardo Urgell. Each night, as the sun goes down, a hand-picked local selector or international guest DJ is invited to tell their own Balearic sunset story through music.

When darkness envelopes the cove and stars begin to twinkle high above, Urusai Izakaya – now in its second year – comes to life, evoking the spirit of a Tokyo tapas bar with its glowing amber paper lamps, flickering candles and intimate layout. The menu is a testament to the skill and creativity of chefs Taku Yuji Mikurya (Ojii) and Romain Littière (Onii-San), who have devised a selection of small plates that sing with umami, such as melt-in-your-mouth toro with stracciatella, ginger, and shiokombu; sea urchin soba with shiitake cream; and red shrimp carpaccio with crispy rice. Vegetarians will adore the eggplant dengaku with miso and the Ibizan vegetable tempura with fermented honey and black garlic, while those with a sweet tooth must sample the house specialty: yuzu strawberries with white chocolate cream.

Match your moonlit meal at Urusai Ibiza with sakes and fine wines curated by sommelier Anabelle Berthelemot, then stick around for àpres-dinner cocktails and digestifs long into the night. Dining at Urusai Ibiza is a masterclass in style and taste, brought to life under the watchful eye of Silencio founder and renowned aesthete, Arnaud Frisch, alongside creative director Olivier Leone, with architecture by Kulapat Yantrasast, a former protégé of the Japanese design icon, Tadao Ando. Many foodies from across the globe have already made the pilgrimage to Cala Molí this season, and yet somehow, it remains a secret to be cherished and shared among like-minded friends.
