Then there’s The Roaming Caviar Service, which sees Magdalena and her team navigate your event, creating interactive mini-moments of theatre as they serve up freshly assembled blinis with crème fraîche and caviar from their custom-made leather aprons and blini-belts. And then there’s the purists’ favourite: The Caviar Bump Station, served from a mother-of-pearl spoon directly onto the back of the hand so the roe warms slightly, releasing its full depth of flavour, which comes along with a quick lesson in how to savour your bump properly.
At the heart of it all is Antonius Caviar, sourced from a family run Polish farm that has earned a serious reputation among top European chefs and caviar connoisseurs. Two varieties are used: Oscietra, with its golden-brown pearls, a buttery richness and soft notes of hazelnut, and the darker, more mineral-leaning Siberian, which boasts an an elegant, clean finish.
