The new summer season brings even more reasons to visit Ibiza Gran Hotel, as the hotel recently unveiled a fresh and stylish transformation for 2025. The striking lobby area at the heart of the resort has been completely renovated and refreshed, as has the MICHELIN-Star fine dining hub, La Gaia, where chef Óscar Molina continues to wow diners with the creation of a new menu. Days at Ibiza Gran Hotel begin with The Grand Breakfast and yes, it lives up to the name. Served daily from 7.30am to 11.30am in Costa Mara, this is no ordinary hotel breakfast. With over 350 delectable bites to pick and choose from at your leisure, it’s an exquisite journey through flavours, both indulgent and virtuous. Inspired by the bustle and colour of traditional markets, The Grand Breakfast is presented via a comprehensive series of themed stations dotted throughout the restaurant – each one worthy of its own fan base. Start with a trip to the mimosa cart or pass by the drinks station for a smoothie or fresh juice made to order. Coffee too, is prepared on the spot by baristas and delivered direct to your table so you can spend more time admiring the array of decadent delights on display.
You can pile your plate high, or flit back and forth between stations, while live Spanish guitar music drifts inside from the garden terrace. Mornings can be extravagant, starting with oysters and champagne, eggs with caviar, churros with chocolate or the ultra-indulgent chocolate fondue. Other treats include fresh-made crepes and pastries, over 35 types of freshly baked bread, a yoghurt bar with Ibiza honey, endless fresh local fruit, hand-sliced jamón and other premium cold cuts and cheese. Oh, so much cheese (including vegan varieties). The Ibiza Gran Hotel chefs are on standby to whip up the perfect tortilla, omelette or organic eggs however you like them. There’s even a station dedicated to the perfection of ripe avocados – The Grand Breakfast makes early risers smug and late risers repentant.

During the day, stroll into Open Spa (there’s an on-street entrance for non-guests) for a blissful, rejuvenating wellness treatment and a whirl around the world-class water circuit before settling onto a sunbed and ordering lunch or snack from Mirai Pool Restaurant. Under Óscar Molina’s expert guidance, this chic, poolside hangout at Ibiza Gran Hotel has turned daytime snacking into an art form – choose from refreshing Mediterranean-inspired dishes like crudité and dips, zingy ceviche, hand-cut Iberian jamón, healthy salads, hearty sandwiches, fresh grilled fish, juicy burgers and more. When the sun dips and the mood shifts from lazy summer days to buzzing nights at the bar, it’s time to experience the other side of Molina’s magic. With the debut of the chic new bar, Musa, and a complete reimagining of the incomparable La Gaia, evenings at Ibiza Gran Hotel set a new benchmark for culinary excellence. Master mixologist Daniel Martínez helms the lobby bar, where he’s created an extraordinary cocktail menu inspired by the stunning artworks on show around the resort. Meanwhile, Molina’s bar menu reflects his continued obsession with local and seasonal produce, making Musa the ideal pre-dinner meeting point or late-night tipple spot.
Molina is famed for his perfectionism and dedication to quality in every aspect of the Ibiza Gran Hotel culinary world, but there’s no doubt the pinnacle of his gastronomic universe is La Gaia. When the restaurant was recognised with two Repsol Soles in 2020 and 2021, La Gaia was already on the must-visit lists of foodies worldwide. Then came a MICHELIN star in 2022 and Molina and his team have been squarely cemented in the firmament of haute dining ever since. The sophisticated new dining space has been designed by Sandra Tarruella Interioristas reflecting a modernised Ibicenco aesthetic. Molina has revised his two outstanding tasting menus to reflect his deep love for the island and new for 2025 is the option to order à la carte – perfect for those wanting to mix and match, or anyone with a smaller appetite.
Illa means island in Catalan while Horitzó means horizon – and indeed, both these menus expand the horizons of fine dining at Ibiza Gran Hotel. Each degustation is not only a celebration of the fine growers and providores that supply ingredients to Molina’s kitchen, but also a masterclass in technique and surprise. Tangy pickled beets with horseradish, coconut and cashew; a single plump oyster with spirulina seaweed and beurre blanc; carabinero prawn mousse; a cloud-like seafood croquette; local lobster with sea grapes and coral sauce; and Balearic black pork in its own jus with tubers. Every last morsel at La Gaia is like a firecracker of flavour.
