The list mixes the flavours of the Med with Latino flair, taking classics and adding a Pomelo Playa twist. Mateo’s Pomelo blends Patrón with lime juice, lavender syrup and grapefruit soda; the Lupita is a tropical delight with Saint Germain, mezcal, pineapple, lime and ginger; and named for Puerto Rico, the Boricua cuts Bacardi Carta Blanca with Italicus, lime, coconut, orange bitters and pineapple.

The Pomelo Playa menu takes its cues from across the Mediterranean, with a menu brimming with delicious sharing plates, pleasingly crunchy salads and hearty mains. Clean, seasonal and bright, the dishes coming out of the this Ibiza beach restaurant’s kitchen are as beautiful as the sea views expanding from its terrace. Start with a mezze of hummus, tzatziki and mutabal served with warm pita; homemade croquetas or traditional calamari a la Andaluz with a decidedly non-traditional harissa mayonnaise.
