Sustainability lies at the heart of the menu, with the Ibiza fine dining restaurant growing its own organic produce at JUL’S Farm, set on two hectares nearby, where ingredients are sourced daily to ensure freshness, flavour and the ultimate farm-to-table experience.
A hand-picked selection of caviar – served with toasted brioche or sourdough with rich sour cream – is perfect to pick at while perusing the extensive menu. Standout starters include bluefin tuna tartare with raspberry and beetroot sorbet, blood orange and ponzu sauce; the Athinaiki salad, with steamed fish fillet, basil mayo, peas, celery and green apple; or the wagyu souvlaki with grilled pita, kosho yuzu tahini and yoghurt. The pasta and risotto options at JUL’S Ibiza see spicy king crab tagliolini with mint, harissa, mango and pineapple chutney vie for attention against paccheri ‘pastitsio style’ – slow-cooked Iberico pork in rich kariki cheese bechamel and honey soy sauce. There’s also the classic spaghetti with Parmesan emulsion, kosho beurre blanc, lemon zest and Beluga caviar; and the much-loved buckwheat risotto with mixed grilled mushrooms, pickled berries, soy-cured yolk and truffle.
Ibiza fine dining favourites fresh off the open grill include a smoked chicken fillet with fermented okra and bulgur; sea bass with an edamame and kale salad; the Korean BBQ silver cod and flame-kissed wagyu served with celeriac, topinambour purée, potato fondant and a red wine jus.
