Every year, acclaimed executive chef Óscar Molina continues to expand this sensational gastronomic experience for hotel guests and visitors alike.
After years of global travel, a Michelin star and two Repsol suns, Molina has now incorporated his vast knowledge into an Ibiza fine dining menu focused toward creating the best gastronomic experience using produce from Ibiza, the Balearics and the Mediterranean. Dinner at La Gaia by Óscar Molina becomes a ceremony inspired by the delicate balance between flavour, texture, presentation and colour, celebrating zero-kilometre cuisine and remaining authentic to the quality of the seasonal ingredients from the island.
The two exquisite tasting menus at La Gaia by Óscar Molina, take inspiration from the island with ‘Tanit’ and ‘Posidonia’ offering honest explorations of earth and sea. Sample pickled tomato and caviar, or Mille-fuille of celeriac, before moving onto the roasted Ibizan red pepper served in its own juice with basil from the Tanit menu, or peix sec, the typical Formentera sun-dried fish served with romanesco sauce from Posidonia.
From the surrounding Mediterranean Sea comes delicious red shrimp and lobster croquettes, whereas from the land, the famous Balearic black porc has a trilogy of dishes, served with artichoke; creamy rice; and local wild mushrooms, and of course, the local oven-baked Ibiza lamb is also featured. Desserts such as the favourite Graxionera or the Ibiza flao are given contemporary makeovers with regional cheese and fresh mint.
All dishes are served on bespoke dinnerware sets handmade by local artisan potters, and displayed amongst leaves, indigenous flowers and edible decorations, to meticulously present the sustainable dishes, a testament to the ecological awareness and environmental commitment that the fine dining restaurant stands for. A perfect blend of haute cuisine and artistic expression, an evening spent at La Gaia by Óscar Molina is certainly an experience like no other.
