Set on the golden shores of Cala Nova on the island’s east coast, BLESS Hotel Ibiza is one of the most elegant five‑star resorts in Ibiza and its newly rebranded signature restaurant, Lumbre, is a study in elemental culinary pleasure. Lumbremeans ‘fire’ in Spanish and ‘light’ in Catalan – a fitting name for the new fire-cooking restaurant, which celebrates the rich gastronomic heritage of the Mediterranean by bringing its diverse flavours to life in a bright and beautiful setting. It’s a new era for the hotel, and its executive chef, Raúl Gutiérrez, who steps up to helm the kitchen after six seasons spent working alongside the distinguished (and multi-starred) Basque chef Martín Berasategui.

In keeping with its Spanish roots, the lunch menu at Lumbre begins with a series of starters, designed to share, dubbed De La Isla (from the island). Snack on crostes tradicionales – an Ibizan salad of ripe tomatoes, onions, green peppers and rustic bread – or opt for the Josper‑grilled raíces, a deeply nourishing plate of beetroot, crispy kale, creamy avocado, tangy feta and toasted pine nuts. Be sure to try the chef’s signature gildas, individual skewers made with red tuna, pickled guindillapeppers, anchovy and a plump, juicy gordal olive, alongside a plate of delicate Ibiza croquetas with locally made sobrasada and molten cheese.
 
Of course, there’s the classics: acorn-fed jamón Ibérico; a twist on everyone’s favourite bravas; crispy fried calamari (caught fresh off the island’s shores), Russian salad (ask for it topped with local lobster) and huevos rotos – scrambled eggs with fried potato and ham. It could be enough for a light lunch, or simply something to stimulate your appetite before the culinary creations that are yet to come. The main menu is divided between Arroces con Alma (rice with soul) or De La Lumbre (from the fire), and whether you’ve got a craving for seafood, fish, meat or veggies, Gutiérrez has created something to suit all palates at Lumbre.

Devoted carnivores will find it hard to choose between the Wagyu picanha or the Black Angus skirt steak, while vegetarians won’t be able to resist the chargrilled lettuce hearts that radiate a smoky, aromatic essence. Gutiérrez celebrates fire, land and sea through all of his menus at Lumbre, however he also pays tribute to Ibiza’s sweet traditions. A dessert of greixonera al estilo Lumbre reimagines the island’s beloved bread pudding with ensaimadas, vanilla and cinnamon, while tiramisú de Café Caleta folds rum, brandy and spiced Ibizan coffee into a scrumptious indulgence. Algarroba y chocolate is a deep, dark and bittersweet homage to the island’s native caro; and the bright lima, limón y almendra is unveiled as a light, fragrant almond sponge cake kissed with citrus zest – a perfect final note to end the evening.
