The traditional tuna carving ceremony – which begins at 7pm – isn’t for the faint-hearted\, but it definitely creates a dramatic prelude to an evening steeped in Japanese culinary heritage.  \nOnce the chef’s knives are down\, the focus shifts to the table with a four-course menu built around the freshest cuts\, paired with refined accompaniments in true omakase style and served from 8.30pm. Dishes include tuna and beet toast with chipotle mayo; a spoon of spinal meat; a creamy tuna croqueta; and the sashimi trilogy of akami\, chutoro and toro; tataki with ponzu sauce; urumaki with goat cheese\, foie gras and eel sauce and much\, much more. At 90€ per person (excluding drinks)\, it’s a rare chance to see craft and theatre collide before settling into a meal that balances precision with flavour.

With sky-high views\, good vibes and a one-night-only gourmet burger menu packing an enormous flavour punch\, it’s the perfect excuse to head skyward for sundowner or to feast beneath the stars. \nThere are four bold culinary creations to choose from on the one-night-only menu. Try the Carbonara Passion\, made with juicy wagyu beef\, crispy guanciale and sharp pecorino cheese\, drizzled in rich carbonara sauce with a smoked egg yolk\, or opt for the popcorn-topped Fashion Victim\, featuring wagyu\, smoked Monterrey Jack cheese\, bacon jam with Ibiza herbs and barbecue sauce. \nVegetarians will love the loaded Vegetable Party burger – a vegan Beyond Meat pattie topped with oak-smoked cheddar\, slow-caramelised onion\, creamy avocado mayo and fresh rocket. There’s also the more-ish Oh My Chicken! where oak-smoked Monterrey Jack is smothered on crispy fried chicken\, topped with even crispier bacon\, coriander\, sweet-and-sour red onion and coleslaw then doused in Cajun sauce and basil mayo. \nEvery burgers is wrapped up in a soft and squishy artisanal brioche bun\, and come served with fries and a drink\, all for just 30€ – the panoramic 360º backdrop comes free.
