Inspired by the idyllic backdrop painted on screen in Barbet Schroeder’s 1969 movie, More, the Ibiza restaurant embodies the island’s creative spirit and predilection for freedom of thought. The hotel’s fine dining restaurant is tucked away in an enchanting secret garden amid the rolling hills of Santa Gertrudis, ,More’ by Cas Gasi is a bucolic extension of the stylish estate, where guests dine in total peace surrounded by citrus groves and ripening fruits and veggies of every imaginable colour. Open every evening from 7.30pm, long wooden tables stretch out beneath the twisted boughs of olive trees and guests are afforded the time and space to revel in the magical ambience.

The culinary philosophy at ,More’ by Cas Gasi is galvanised by this very same abundance of life. Margaret oversees the hotel’s Silent Garden, a regenerative agricultural project with a focus on organic crop grown using artisanal methods and the natural rhythms of nature. The produce is then reinvented in the beautiful Ibiza restaurant kitchen, where a team of young chefs combine gems harvested from the rich earth with organic meats, wild fish, and a healthy dose of flair, to magnificent effect. Everything is lovingly homemade freshly on the premises, with techniques like fermentation playing a key role in dishes, and nothing is ever wasted.

Dinners at ,More’ by Cas Gasi are defined by gratitude for the food plucked from the ground beneath you, and the Ibiza restaurant’s fine dining menu reflects as much. Sharing plates range from delicious options like garden tartare, made using salt baked beetroot, avocado and nasturtium granite, to fresh gazpacho primavera, made with green peas, mint, and red prawn, and the classic Cas Gasi salad, featuring fermented crudités, lettuce and wild sprouts. Mains, meanwhile, include delicate wild sea bass served with parsnip purée, hazelnuts and green peas; juicy ribeye steak with young spinach and potato thyme terrine; and lamb with sour pomegranate and green leaves.

Desserts are a way to ensure the sophisticated dining experience lingers into the night, so try the goat milk cake,made with lacto-fermented orchard strawberries, lime and rosemary, or the zesty lemon or mandarin sorbet, with fruits picked direct from the tree.
