Guests can savour three exceptional Ojo de Isla expressions. Start with Espadín, cultivated for eight years and carrying a herbal, subtly smoky profile paired with zesty grapefruit. Move on to Tobalá, a wild agave harvested after 12 years, offering floral, fruity notes alongside fresh kiwi. Finally, dive into the rare Tepeztate–Jabalí, wild agave aged 25 to 35 years, intense and mineral-rich, balanced by the deep sweetness of dark chocolate. At just 30€ per tasting, it’s an unhurried ritual in three acts, uniting tradition, flavour and the spirit of two worlds in one unforgettable evening.
